After surviving the Holocaust, Leon Kastner's goal was to become a butcher in Toronto, ON and when circumstances permitted otherwise, he and his wife moved to be with family in Rochester, NY. He apprenticed at shops around the city and was a partner/founder of Allen Beef Company.

In 1973, Leon Kastner founded Leon Kastner Wholesale Meats Corp.. It became the premier meat distributor in Western New York over the next 15 years, concentrating its efforts in quality, center of the plate protein offerings. After Leon passed away in 1988, his son-in-law Steve Fraum, continued to run the business.

Steve continued the excellence in center of the plate product and began expanding the business into providing portioning services and boxed product. In 1997, Villano Provisions was bought, which allowed Kastner Food Service to move into larger facilities and build the 1st dry-aging room in Western New York.

After, the 1st's continued with the honor of being the first in Western New York to be licensed for Certified Angus Beef (CAB) and their program of beef. (www.cabprogram.com) In 1999, Kastner Food Service became the sole supplier to Harrah's in Atlantic City for their protein products. The exclusive relationship lasted for 2 years; during that time Harrah's delis and steakhouses were continually voted the best around. Kastner Food Service was also involved with creating one of the first protein focused websites which led into a relationship with the acclaimed Lobel's Butcher shop in New York City.

2001 also brought the commencement of a relationship with Borgata Hotel, Casino and Spa in Atlantic City. Kastner began providing a majority of their protein product to their acclaimed restaurants, i.e. Bobby Flay's Steakhouse, the Old Homestead, Wolfgang Puck, etc.

Fast-forwarding to 2004, Kastner Food Service officially entered the "Broad line" side of the foodservice industry with its purchase of Statewide Food Service, getting their foot in the door and allowing them to be a more viable competitor in the market. Kastner Food Service also became a member of the Frosty Acres Brand family, bringing more exposure within the trade (www.frostyacres.com).

In 2006, Kastner Food Service was brought under the fold of the holding company, Valiant Brands. Kastner Food Service continues to provide center of the plate protein products and has established themselves as a major local player in the broadline foodservice industry by gaining clients such as Salvatore's Pizza chain, AMF Bowling Association, and several other Western New York restaurants.
